Asparagus & Halloumi Burger


Serves 1


spears of Scotty Brand asparagus

2 slices of halloumi cheese

1 roll

4 baby tomatoes

Mixed salad leaves

Chilli and Tomato Chutney

  1. Chop the ends of the asparagus (keeping the tips) and cook in boiling water for 5-7 minutes
  2. Cut the halloumi into 1cm slices and cook by frying or in a grill pan on both sides with the onion.
  3. Add the lettuce, onion, asparagus and halloumi onto the bread roll, adding a dollop of chutney and topped with baby tomatoes.
If you'd prefer a meat in your burger, feel free to add a slice or two of bacon! This is also a great dish to serve up on sunnier days where you have the BBQ on.
