Avocado, Chicken & Bacon Salad


Serves 2 as a main / 6 as a side

Salad Ingredients


rashers of Scotty Brand bacon


  • 2 large cooked chicken breasts shredded or chopped
  • 2 large avocados
  • 1 bag of mixed salad leaf
  • 1 red pepper
  • 1/4 cup of spring onion
  • 2 Tbsp dill chopped

Lemon Dressing:

  • 3 Tbsp lemon juice freshly squeezed
  • 3 Tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper or to taste

  1. Cook the bacon and set aside to cool. Once cooled, chop into smaller pieces
  2. Dice or shred the 2 large cooked chicken breasts and place into a large mixing bowl
  3. Slice the avocado into bite-sizes pieces and add to the mixing bowl
  4. Add in all of the salad leaves, chopped pepper, spring onion, bacon & dill
  5. Add dressing ingredients to a small bowl and once combined  add to the salad.
Add or remove additional ingredients as desired.
