Bloody Mary Prawn Cocktail
1 pack of Scotty Brand cocktail tomatoes
2 tbsp Worcester sauce
2 tbsp horseradish sauce
2 tsp Tabasco sauce
2 tbsp vodka (optional)
1 tbsp chopped fresh parsley
2 tbsp extra virgin olive oil
150g king prawns
1 avocado, peeled, de-stoned and cubed

- Blend the tomatoes in a food processor until smooth, and then push through a sieve to leave a smooth puree. Stir in the juice of half a lemon, Worcester sauce, horseradish sauce, Tabasco, parsley, vodka and oil. Season to taste and add more of the sauces, if required.
- Divide the bloody Mary sauce between the serving glasses and top with the avocado cubes, king prawns and a few parsley leaves. Serve with a wedge of lemon or squeeze it over the top to prevent the avocado from turning black.
- Serve immediately.
