Bloody Mary Prawn Cocktail


Serves 4

1 pack of Scotty Brand cocktail tomatoes



2 lemons

2 tbsp Worcester sauce

2 tbsp horseradish sauce

2 tsp Tabasco sauce

2 tbsp vodka (optional)

1 tbsp chopped fresh parsley

2 tbsp extra virgin olive oil

150g king prawns

1 avocado, peeled, de-stoned and cubed

Salt and black pepper, to taste

  1. Blend the tomatoes in a food processor until smooth, and then push through a sieve to leave a smooth puree. Stir in the juice of half a lemon, Worcester sauce, horseradish sauce, Tabasco, parsley, vodka and oil. Season to taste and add more of the sauces, if required.
  2. Divide the bloody Mary sauce between the serving glasses and top with the avocado cubes, king prawns and a few parsley leaves. Serve with a wedge of lemon or squeeze it over the top to prevent the avocado from turning black.
  3. Serve immediately.
