BLT Pitta Sandwich


Serves 4

8 rashers of Scotty Brand back bacon



4 leaves of Scotty Brand lettuce

4 cocktail tomatoes

4 pitta breads

4 level tbsp reduced calorie mayonnaise

  1. Trim the fat off the bacon and grill until it is crispy.
  2. Wash the lettuce and tomatoes. Then shred the lettuce into small pieces and slice the tomatoes.
  3. Warm the pittas in a toaster or under the grill.
  4. Open the pitta breads and spread 1 tbsp of light mayonnaise in each.
  5. Add 2 bacon rashers, lettuce and tomato to each pitta bread and serve.
