250g diced chicken

450ml chicken stock

25g butter

25g plain flour

Salt and finely ground pepper to taste

  1. Preheat the oven to 350°F/180°C or Gas mark 4.
  2. Place the vegetables into a casserole dish.
  3. Melt the butter in a frying pan, then add in the chicken and cook until sealed.
  4. Add the chicken to the casserole dish. Mix in the flour to the butter left in the pan.
  5. Gradually add the chicken stock to the mixture in the pan, and stir well until it has a smooth consistency.
  6. Pour the stock mixture over the chicken and vegetables in the casserole dish, then cover and place in the centre of the preheated oven for 90 minutes.
Variations: there are hundreds of recipes for casseroles. With your vegetables, you can use beef, turkey, chicken, Quorn – pretty much anything you want. As a general rule, you will need to cook the meat through first, by shallow-frying it, before leaving it to cook slowly in the mix of stock and our Scotty Brand Casserole Mix in the oven. For extra richness, why not add in a small glass of wine and some herbs?
