Lentil Soup


Serves 4

4 Scotty Brand carrots, medium size




2 small onions

2 garlic cloves

2 red peppers

2 tbsp vegetable oil

1.2l water

2 reduced salt vegetable stock cubes

200g red lentils

  1.  Peel and chop the onion, garlic and carrots. De-seed and chop the pepper.
  2. Fry the onion, garlic and pepper in oil over a medium heat in a large saucepan until soft.
  3. Add the carrots, water, stock cubes and lentils and bring to the boil.
  4. Simmer for 45 minutes, or until vegetables are tender.
  5. Serve hot.
