Scottish Asparagus and Bacon Parcels


Serves 4

1 bunch of Scotty Brand Asparagus

4 rashers of Scotty Brand Unsmoked Bacon, cut in half length ways

2 tbsp olive oil

1 lemon, juiced

4 stalks of rosemary

Salt & pepper, to season

  1. Preheat grill to 180C.
  2. Lie the asparagus out flat, drizzle with oil, lemon juice, and season lightly.
  3. Separate the asparagus into four even sized piles and gather together with a stalk of rosemary.
  4. Wrap each set of asparagus and rosemary around the middle with two long slices of bacon, taking care not to tear the bacon and ensuring it overlaps to secure the spears in place.
  5. Repeat with the remaining ingredients to create four asparagus parcels.
  6. To grill, place the parcels under the pre-heated grill and cook for 10 minutes or until the bacon is crisp and the asparagus is tender and fragrant. Keep an eye on the asparagus ends and cover with foil if they brown too quickly.
  7. Serve immediately, with an extra squeeze of lemon juice if wished.
