½ pack of Scotty Brand Baby Plum Tomatoes, quartered
Small bunch of fresh basil, leaves removed and finely sliced
2 tbsp fresh parsley, finely sliced
1 garlic clove, peeled
1 tsp balsamic vinegar
1 tbsp extra virgin olive oil
1 loaf of ciabatta

- Without removing the crust, cut the loaf of bread into thick slices, and toast under a grill until golden.
- Slice the garlic clove in two and lightly rub the cut side on each slice of toast.
- To make the topping, mix the tomatoes with the basil, parsley, vinegar and oil. Season to taste then top your hot toast.
- Add an extra drizzle of oil and a few basil leaves for presentation.
- Serve immediately.
