Tomato Bruschetta


Serves 4

½ pack of Scotty Brand Baby Plum Tomatoes, quartered


Small bunch of fresh basil, leaves removed and finely sliced

2 tbsp fresh parsley, finely sliced

1 garlic clove, peeled

1 tsp balsamic vinegar

1 tbsp extra virgin olive oil

1 loaf of ciabatta

Salt and pepper, to season

  1. Without removing the crust, cut the loaf of bread into thick slices, and toast under a grill until golden.
  2. Slice the garlic clove in two and lightly rub the cut side on each slice of toast.
  3. To make the topping, mix the tomatoes with the basil, parsley, vinegar and oil. Season to taste then top your hot toast.
  4. Add an extra drizzle of oil and a few basil leaves for presentation.
  5. Serve immediately.
