Cherry & Chocolate Baked Oats

Ingredients

Half a 200g punnet of Scotty Brand Scottish Cherries
1 tbsp chia seeds
400ml Oatly chocolate milk (you can use any chocolate milk)
150g whole rolled porridge oats
50g dark chocolate chopped into chunks
1 tsp baking powder
1 tsp vanilla extract
50g walnuts or hazelnuts
Handful of desiccated coconut or coconut shavings
Greek Yoghurt to serve

METHOD

  1. Heat the oven to 200 degrees.

  2. Add the chia seeds to 3 tbsp of warm water.

  3. Meanwhile pit the cherries and add them to a large bowl with the other ingredients, followed by the chia mix.

  4. Tip into an oven proof dish and scatter some coconut on the top.

  5. Bake for 25-30 mins until piping hot in the middle.

  6. Serve warm with a dollop of Greek yoghurt and some cherry compote*.

*Use the other half of the punnet to make a compote. Add pitted cherries to a pan with a little water, a large drizzle of honey or maple syrup, a pinch of cinnamon and stew until soft. Keep an eye on the pan and add more water if the mixture gets too dry.
