Chocolate Gnocchi Christmas Puds

Ingredients

3 large Scotty brand Kestrel Potatoes
250g plain flour
4 tbsp cocoa powder
2 tbsp sugar
1 egg
Oil for frying
Icing to decorate

METHOD

  1. Peel and chop the potatoes into small chunks. Add to a pan of boiling water and cook till soft.

  2. Strain the potato, mash and let cool.

  3. Add the potato to a bowl, make a well and crack in the egg. Add in the sugar and cocoa powder and mix well.

  4. Add in the flour gradually and work together till a dough forms.

  5. Pour onto a floured surface and knead until it stops being sticky (you made need to add more flour if it still quite wet).

  6. Roll into a long sausage that is about two finger tips in thickness. Then cut along and roll into balls.

  7. Heat the oil in a pan and add in the gnocchi. Cook on all sides and strain on some kitchen towel.

  8. Let these cool and decorate with icing to look like Christmas puds.
