1 bag of 2kg Scotty Brand Potatoes (3 large potatoes used for above serving)
200g Scotty Brand Frozen Garden Peas
2 tbsp olive oil
2.5 tbsp melted butter
Seasoning: 2 tsp of spice kitchen Cajun spice, ½ cumin, 1 tsp salt, oregano.
1 tbsp crushed garlic
For the pea dip:
1/2 lemon and zest
2 tbsp of Greek yogurt
Handful of fresh min
1/2 tsp of mint sauce
Seasoning: ½ tsp pepper, dry mint, zaatar. 1 tsp salt.
Wash and chop the Scotty Brand Potatoes in half length ways, and then cutting them into 3 wedges.
Par boil for 7- 8 minutes, soft but still firm. Drain and add to a baking tray or air fryer tray.
Melt your butter add to a bowl, along with olive oil, garlic and seasoning.
Pour over the potatoes, using your hands coat and mix well.
Air fry for 20 minutes on 190c or oven bake for 25-30 mins. Turning half way.
For the dip, boil the Scotty Brand Peas for a few minutes, drain and add to a blender, along with yogurt, lemon, seasoning and mint. Scrape the sides and blend until desired consistency.
Spread the dip on to a plate, add the potatoes and enjoy!
