4 large Scotty brand Potatoes
1/2 packet of Scotty Brand Smoked Salmon
100g cream cheese
Handful of fresh or fry chopped chives
Salt & pepper
Paprika
2 tbsp plain flour
1 tsp heaped goose or duck fat (can also use olive oil as a substitute)
Preheat oven to 180 degrees (fan) and place a baking tray inside.
Chop your Scotty Brand Potatoes into slices and parboil on the hob for about 5 minutes until they have softened.
Strain the potatoes and add to a bowl.
Season with salt, pepper, and paprika and mix to coat evenly.
Add 2 tbsp of flour to the mixture (add more if needed) and mix well so all sides are well coated.
Remove baking tray from the oven and add a spoonful of the fat to the pan, it should melt easily as the pan has been in the oven.
Add your potatoes to the pan, shake the tray to ensure they are well coated.
Cook in the oven for around 40 minutes until golden and crispy - halfway through, flip the potatoes over so both sides crisp evenly.
While the potatoes cook, in a bowl add the cream cheese, chives, and some salt and mix together well.
Cut the smoked salmon pieces into ribbons.
When the potatoes are cooked, set out on a plate or serving board.
Carefully spoon the cream cheese mixture onto the potatoes, about 1 heaped teaspoon per piece.
Add the salmon on top.
To serve - top with some chives and enjoy!
