500g Scotty Brand Potatoes (cooked weight)
3 x tbsp goose fat
150g Scotty Brand Frozen Peas
2 x tsp plain flour
50g grated parmesan (plus extra for grating over at the end)
1 x tbsp fresh parsley
1 x tbsp chopped rosemary
Salt & pepper
Par-boil Scotty Brand Potatoes in salted water.
Drain and shake them roughly in a sieve.
Add to baking tray, lined with greaseproof paper, with 3 x tbsp goose fat and ensure all potatoes are coated in fat.
Combine parmesan, flour, parsley & rosemary together in a bowl with salt & pepper. Pour over potatoes and ensure thoroughly coated.
Roast in oven at 220 degrees for 30-35mins, tossing half way through.
Cook Scotty Brand Peas as per packet instructions, drain and pour oven roast potatoes and grate more parmesan on top, oven roast for a further 5 mins, toss through & serve with your roast.
