3 Medium Scotty Brand Potatoes
100g Smoked Salmon
8 Scottish Langoustines
3 Spring Onions
1/4 Cucumber
Mayonnaise
Dill
Salt
Wash and cube the potatoes, ensuring they are roughly the same size. Leave the skin on.
Don't boil the potatoes, bring them to a rolling simmer for 10mins in salted water.
Roughly chop the Dill, Langoustines, Smoked Salmon and Spring Onions.
Once the potatoes are cooked, drain them then add to a frying pan with butter and sauté for 5mins until crispy on the outside.
When the potatoes have cooled add them into a large bowl, pour over the mayonnaise and combine together with all the other ingredients. Gently mix well.
Spoon into a serving dish and garnish with a slice of lemon and enjoy!
