200g Scotty Brand Peas
1 garlic clove, crushed
1 tbsp tahini
Squeeze of Lemon
1tbsp cooked cannellini beans
2 tbsp olive oil
Cook the Scotty Brand Peas until tender. Drain and rinse them under cold water to cool.
In a food processor, combine the cooked and cooled Scotty Brand peas, garlic, tahini, extra-virgin olive oil, lemon juice and cannellini beans.
Pulse the mixture until smooth and creamy, scraping down the sides of the processor as needed. If the hummus seems too thick, you can add a little water or more olive oil to achieve the desired consistency.
Season the pea hummus with salt and pepper to taste. Adjust the seasoning as needed to suit your preference.
Transfer the pea hummus to a serving bowl and drizzle with a bit of extra-virgin olive oil. Sprinkle a pinch of paprika on top for colour and flavour. You can also garnish with a few Scotty Brand Peas for an extra pop of green.
Serve the Scotty Brand Pea hummus with pita bread, crackers, or vegetable sticks for dipping. It also makes a great spread for sandwiches or wraps.
