Posh Chips with Salmon & Avo Mushy Peas

Ingredients

1/2 Bag Scotty Brand Chippy Chips
100g Scotty Brand Scottish garden peas
Scotty Brand Scottish Smoked Salmon
1 Avocado, skin and stone removed
Lemon juice
Smoked paprika
Salt & pepper
Chilli flakes

METHOD

  1. Pre-heat oven 230°C /Fan 210°C/Gas Mark 8.

  2. Place the Scotty Brand Chippy Chips onto a baking tray in the centre of the oven.

  3. Cook for 20-22 minutes, turning half way through cooking.

  4. Meanwhile, cook the peas according to packet instructions, drain and chill with cold water.

  5. Mash together the avocado flesh and peas. Season to taste with lemon juice, smoked paprika, salt & pepper.

  6. Once the Chippy Chips are cooked, load them up on a plate or sharing dish and top with the avocado & mushy peas mix, some smoked salmon and a sprinkling of chilli flakes.

  7. Enjoy!
