1 cup frozen Scotty Brand peas.
2 large peeled cubed Scotty Brand potatoes
1 large onion finely chopped
thumb of ginger and 3 garlic cloves
3 tbsp rape seed oil
1 tsp cumin seeds
1 green chilli (optional)
Spices: 1 tsp salt, garam masala. 3/4 tsp chilli powder, turmeric powder.
4 tbsp passata
1 cup water.
fresh coriander
In a small blender: blitz onions, then ginger garlic and chilli.
In a pan temper the cumin seeds, add oil and add onions, cook for 5 mins.
Add the blended mix of onions, ginger, garlic and chilli and cook until browned.
Add spices and cook further, add potatoes and coat well, add passata and cook with the lid on the pan for 5 minutes on medium heat.
Once done, add the peas and water and simmer until the potatoes soften for around 15 minutes or until the sauce has thickened.
Finish with fresh coriander.
Serve with accompaniments if your choice!
