450g Scotty Brand Potatoes
170g Breadcrumbs
3 tbsp Cornflour
Salt to taste
Oil for Frying
Wash the Scotty Brand Potatoes thoroughly. Peel and cut them into chunks.
Place the potato in a large pot of salted water. Bring the water to a boil and cook the potatoes until they are tender but not falling apart. This should take about 10-15 minutes.
Drain the cooked potatoes and let them cool slightly. Once they are cool enough to handle, mash them until smooth and lump-free.
In a mixing bowl, combine the mashed potatoes with cornflour, breadcrumbs and salt. Mix well until the ingredients are fully incorporated.
Cover the bowl with plastic wrap or a damp cloth and let the dough rest for about 10 minutes.
On a clean and lightly floured surface, roll out the potato dough to a thickness of about 1/4 inch.
Use a smiley face cookie cutter or any desired shape to cut out the potato smileys from the rolled dough.
Heat vegetable oil in a deep frying pan over medium heat.
Carefully place the smileys into the hot oil, frying them in batches to avoid overcrowding the pan.
Fry the smileys until they turn golden brown and crispy on both sides. This should take approximately 2-3 minutes per side.
Remove the smileys from the oil and place them on a plate lined with paper towels to absorb any excess oil.
Serve the Scotty Brand Potato smileys hot and crispy as a delightful snack or side dish.
