1 tbsp olive oil
200g tender stem broccoli
2 garlic cloves
300g frozen Scotty Brand Garden Peas
8 eggs
100g mature Cheddar, grated
Rocket, to serve
Heat the oil in a large frying pan on a medium heat. Chop up your broccoli and fry for five minutes.
Slice your garlic cloves and add them to the pan alongside your Scotty Brand garden peas. Cook for a further two minutes.
Preheat your grill to high.
Break your eggs into a jug and give them a good whisk. Grate your cheese and add it to the yolk mixture. Season your eggs with salt and pepper and then pour them into the pan over the vegetables. Give it a stir before patting it all down with a spatula.
Continue to cook your frittata without stirring for five minutes. Pop it under the grill (with the handle of your pan sticking out) and cook for a further four minutes until cooked through with a nice golden top.
Remove your frittata from the oven and plate it up with a little rocket and some more Scotty Brand Garden Peas (You can thaw these in warm water before serving).
Slice, tuck in and enjoy.
