3 Scotty Brand potatoes, peeled and cut into 1-inch chunks
1 cup frozen Scotty Brand peas
3 tablespoons olive oil
1 onion, diced
3 carrots, peeled and cut into 1-inch chunks
1 ham hock or 1 cup diced ham
6 cups chicken or vegetable broth
1 bay leaf
1 teaspoon dried thyme
Salt and pepper to taste
Place the Scotty brand potatoes, carrots and onion in slow cooker. Add the Scotty brand frozen peas and ham on top along with thyme and bay leaf.
Pour in chicken or vegetable stock and season with salt and pepper.
Cook on LOW for 8 hours or HIGH for 5 hours.
Remove bay leaf. Shred ham with two forks and stir into soup to incorporate flavors.
Adjust seasonings to taste. Add extra broth or water if soup is too thick.
Cook for an additional 30 minutes to 1 hour on HIGH if needed to bring up to desired temperature and adjust consistency.
