1 x bag of Scotty Brand Baby Potatoes or Ayrshire Potatoes
5 Streaky Bacon Rashers
2tsp Oregano
1tsp Garlic Granules
High Quality Salt Flakes
Olive or Rapeseed Oil
Sour Cream (optional for dipping)
Preheat oven to 220 degrees.
Put your Scotty Brand Baby Potatoes in salted cold water and bring to the boil for 25minutes.
Drain your Scotty Brand Baby Potatoes once cooked through.
Use a cup or bottom of the pan to smash your potatoes and transfer to a lined baking sheet.
Drizzle the smashed Scotty Brand Baby Potatoes with oil.
Mix the salt, oregano, and garlic granules together and sprinkle liberally over the potatoes.
Put potatoes in the oven for 25 minutes to crisp up.
While cooking in the oven, slice up your bacon into small pieces and fry until crispy.
Time to plate up and top your tatties with bacon and serve with some sour cream for dipping and top with parsley.
