1 bag Scotty Brand Ayrshire potatoes
3 cloves of Fresh garlic
Chilli flakes
Parsley
Olive oil
Place your potatoes in a pot of boiling water for around 20-25 minutes until soft when speared with a fork .
In a dish mix a generous amount of olive oil with chilli flakes and then crush in your garlic cloves.
When the potatoes are ready, strain, and place on a lightly oiled baking tray.
Using a mug, or a heavy bottomed glass, press down on the potatoes until they are “smashed” - be careful to not press to hard or they’ll fall apart!
Using either a teaspoon or a pastry brush, generously coat your potatoes with the oil mixture, making sure they’re totally covered.
Pop in the oven and cook for 20-25 minutes until the potatoes are golden and crispy.
Finally, top with some fresh parsley & enjoy!
