240g milk
20g fresh yeast
180g plain flour
4 eggs separated
A pinch of salt
Warm the milk to body temperature.
Add the yeast and stir in until smooth.
Combine with egg yolks and flour to make a smooth batter.
Season with salt.
Leave to prove in warm place (double in bulk).
Whisk up egg whites until very stiff using an electric mixer and fold into the batter.
Cook on griddle.
Serve Scotty Brand Smoked Salmon on top with sour cream and dill.
