Smoked Salmon, Potato Rosti

Ingredients

4 large Scotty Brand Potatoes, peeled and grated
Scotty brand smoked salmon slices
1 small onion, finely chopped
2 tablespoons all-purpose flour
Salt and pepper to taste
4 tablespoons vegetable oil
4 eggs, for poaching
Fresh dill, chopped, for garnish (optional)

METHOD

  1. Grate the peeled Scotty brand potatoes using a grater. Then place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

  2. In a large bowl, combine the grated potatoes, chopped onion, and flour. Season the mixture with salt and pepper to taste.

  3. Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium-high heat. Take a handful of the potato mixture and shape it into a flat, round patty. Place it in the hot skillet for 4-5 minutes on each side.

  4. Repeat the process, cooking multiple rosti patties at a time, depending on the size of your skillet.

  5. While the rosti is cooking, poach the eggs for about 3-4 minutes or until the whites are set.

  6. Place the cooked rosti patties on serving plates, top each rosti with slices of Scotty Brand smoked salmon, then carefully place a poached egg on top of the smoked salmon.

  7. Garnish, serve and enjoy!
