4 Scotty Brand Potatoes diced into small cubes.
200g bacon diced.
1 onion finely chopped.
50g shredded cheddar cheese
2 tablespoons olive oil
1 teaspoon smoked paprika.
Salt and black pepper to taste
Fresh parsley, chopped, for garnish.
Fried or poached eggs for serving (optional)
Preheat your oven to 200°C (400°F).
In a large oven-safe skillet, heat olive oil over medium heat. Add the diced Scotty Brand Potatoes and cook until golden brown and crispy, stirring occasionally.
This may take about 10-15 minutes.
Add the diced bacon and chopped onion to the skillet. Cook until the bacon is crispy, and the onions are soft and translucent.
Sprinkle the shredded cheddar cheese evenly over the potato mixture. Transfer the skillet to the preheated oven and bake until the cheese is melted and bubbly.
Remove the breakfast hash from the oven. Garnish with fresh chopped parsley. If desired, serve with fried or poached eggs on top.
Scoop portions onto plates and serve immediately while the hash is hot and gooey with melted cheese.
