2 Packs of Scotty Brand Lentil Soup Mixes (comprised of 1kg mixed vegetables - carrot, swede, leek, onion + 60g lentils)
Olive oil
1 tbsp garam masala
1 tsp paprika
1 tsp sea salt
1/4 tsp ground black pepper
175 potato - grated (unpeeled weight)
2 vegetable stock cubes
1.2L water
150ml double cream
Preheat oven to 200C fan.
Add the Scotty Brand Lentil Soup Mix to a lined baking tray and sprinkle over garam masala, paprika, salt, pepper.
Drizzle over olive oil then toss so it’s all combined.
Roast spiced vegetables in the oven for 40 minutes.
Once vegetables are roasted, add them to a pot with lentils, grated potato and stock cubes dissolved in water.
Bring the soup pot to the boil and then reduce to a medium heat and simmer for 20 minutes.
Finally, pour in double cream and blend up until smooth.
Serve with some crunchy croutons, a drizzle of double cream and some ground black pepper.
