100g Scotty Brand Cherries
100g Creamy Brie
4 tsp honey
2 tsp dried or fresh thyme
A little black pepper
1 egg, beaten
1 puff pastry sheet
Basil for garnish
To a baking sheet add 1 tsp of honey in each of the middle of 4 corners, sprinkle in 1/2 tsp thyme to each circle and a crack of black pepper
Top each section with 4 cherry half’s and cover with Brie slices.
Press on a rectangle of puff pastry and press the edges down with a fork.
Brush with egg and place in the oven at 200 degrees Celsius for 20 minutes.
Serve topped with basil and enjoy!
