Upside Down Cherry Tarts

Ingredients

100g Scotty Brand Cherries
⁠100g Creamy Brie
4 tsp honey
⁠2 tsp dried or fresh thyme
⁠A little black pepper
1 egg, beaten
1 puff pastry sheet
⁠Basil for garnish

METHOD

  1. To a baking sheet add 1 tsp of honey in each of the middle of 4 corners, sprinkle in 1/2 tsp thyme to each circle and a crack of black pepper

  2. Top each section with 4 cherry half’s and cover with Brie slices.

  3. Press on a rectangle of puff pastry and press the edges down with a fork.

  4. ⁠Brush with egg and place in the oven at 200 degrees Celsius for 20 minutes.

  5. Serve topped with basil and enjoy!
