5 medium Scotty Brand Potatoes peeled
Handful of Scotty brand Garden Peas
Cheese (as much as you like)
1 leek finely sliced
3 garlic cloves sliced + 2 garlic cloves minced
1 tbsp salt
1 tbsp ground and cracked pepper
1 tsp thyme
Fresh Thyme
1 bay leaf
250ml milk (use any) or can substitute this for cream if you would
1 tsp mustard
150 vegetable stock
2tbsp butter
Using a mandoline slicer slice your Scotty Brand Potatoes carefully. Rinse them thoroughly.
In a pan add the sliced potatoes, milk, thyme, bay leaf, minced garlic, salt and vegetable stock. Boil for 6 minutes.
In another pan, melt your butter and add the leeks and sauté for 2-3 minutes.
Add the garlic, seasoning and mustard and cook for a further 2 minutes before mixing the Scotty Brand Garden Peas in.
Pre heat your oven, and grease your oven dish.
Add a layer of potatoes to the bottom and add the caramelised leeks and peas and a sprinkle of cheese.
Layer again with potatoes and finally spoon over the milky broth to cover the potatoes.
Cover with foil and bake for 30 minutes on 180c.
Add a final layer of cheese and breadcrumbs (optional) but highly recommend, these are home made from left over bread.
Grill until crispy and serve.
